- 4 whole chicken legs
- 1 cup chicken stock
- 3/4 teaspoon liquid smoke
- Black pepper tastes good

- Pressurise the grid at the bottom of the pot and add the stock and liquid smoke.
- Separate the rind from the chicken thighs with your hands and season with salt, pepper and garlic salt.
- Now season the top of the bowl with salt, pepper and garlic salt.
- Place the thighs in the pressure cooker with the skin facing up and close the lid.
- Follow the instructions on your pressure cooker and cook for 20 minutes.
- Preheat the grill to high and cover the baking paper with parchment paper.
- As soon as the pressure cooker is ready, place the chicken thighs neatly on baking paper with tweezers.
- Sprinkle the chicken thighs lightly with olive oil.
- Fry the chicken thighs for 10 minutes or until golden brown.

- 6 chicken legs
- 3 teaspoons kosher crystalline diamond salt, 1/2 teaspoon for each leg
- 1 1/2 teaspoon dried Italian herbs, 1/4 teaspoon per thigh
- 3/4 teaspoon freshly ground black pepper, 1/8 teaspoon for the foot
- 3/4 teaspoon garlic powder, 1/8 teaspoon foot powder
- 1 tablespoon vegetable oil
- 1/2 glass of water or, if you prefer, chicken stock
- Inject all chicken thighs evenly with salt, garlic powder, Italian herbs and freshly ground black pepper.
- Heat a tablespoon of oil in the pressure cooker on medium heat and when using the instant pot in Sota mode until it overflows.
- Brown the leather side of the chicken thighs in portions – each thigh should lie flat in the pot. Prepare each pair of thighs until the skin tans, usually in 4 minutes. Then place the tanned legs in the bowl and repeat the procedure with the remaining legs. Pour the chicken fat out of the pot.
- Then start cooking under pressure! Pour 1/2 glass of water into a pressure cooker. Bring the water to the boil on medium heat (or in the pan position), scrape the brown pieces from the bottom of the pan and add them to the liquid.
- When all the brown pieces have been scraped off, put the chicken legs and any chicken juice in the bowl. Close the lid and activate the high-pressure syringe for 30 minutes when using an electric high-pressure syringe, 25 minutes when using a combi steamer.
- Now, of course, let the pressure drop, it’ll take another 15 minutes or so. Serve the liquid in the pan next to it as sauce.
Sauce can be degreased on request. Pour the liquid from the pan into the fat separator and leave it for about 10 minutes so that the fat floats on top of the pan. Then pour the degreased sauce into the serving dish.

- Remove the chicken from the pan, add the onion and garlic and scrape off the brown pieces that stick to the bottom of the pan.
- Pour water and barbecue sauce into the jar and place the drumsticks in the jar with the collected juices.
- Put the lid on the pressure cooker and let it boil for 9 minutes. Release the pressure and then carefully remove the lid.
- Serve the chicken with the sauce to sprinkle on.
